When you first order this, they will ask you if you want Pig Intestines in it. If you don't want, then it will be replaced with more Pork Meat. I'm fine with it, so I told them to go ahead. Its not a Big Bowl, but the amount of ingredients within feels Generous. With every Spoon, there were always either Copious Amounts of Very Thinly Sliced Bittergourd or Pork Parts. Nice. Especially love the Thinly Sliced Bittergourd. They're so Thin, it's almost Translucent and every slice is consistent in thinness. If this is not sliced using a Mandoline Slicer, then the person who sliced this really got Skill. It takes Lots of Practice and Experience to be able to slice not only fast but also to be consistent with this level of thinness.

What is most striking though, is the Soup. I had the original impression that Bittergourd is going to be the Dominant taste, but no. The Base is actually a Very Good Pork Soup and Bittergourd is just there to enhance it slightly. Compared to "Like Mee Noodle House" Pork Soup I reviewed previously in Taman Austin, I feel this has a much less obscene 猪腥味.
The Soup is Savoury and not overly Salty with also a Very Subtle Peppery Bite. I really like that The Bitterness of the Soup is very very subtle, but its there and almost feels like a tease. I feel that because the bitterness is so subtle, even people who don't like Bittergourd may actually like this too. THIS is a very good way to make 苦瓜汤. Never knew Bittergourd can also be used in this way to help mask Piggy Taste too. Clever. In fact I felt this Soup is such a Good Base, it would actually be perfect if made into a Porridge. I was surprised to learn they don't have a Porridge on the Menu so I gave them this suggestion. If you are eating this, I would recommend to dunk a bowl of Rice into it, let it soak up the Soup for awhile and eat it like a Pseudo-Porridge, I feel this would work well.
